Chef Florent Maréchau says seasonal vegetarian menus, organic ingredients will rule 2019



Chef Florent Maréchau from the acclaimed Georges Blanc restaurant, on his recent India trip, spent time taking in the ocean and of course, all the food Mumbai has to offer.

The chef also dished out his thoughts on food trends for 2019 saying, “This year, there will be a growing interest in vegetarian food menus and natural, organically produced ingredients. Seasonal, fresh menus with the highlight on simple cooking will be the key. Restaurants are becoming travel destinations on their own!”

However, Spain still holds a special place for him as his ultimate food destination.

He says, “Spain is one of my most favourite culinary destinations of the word. I enjoy the concept of tapas, small plates and ‘less is more’ approach to minimal cooking techniques that makes the ingredient the star.”
