Chandigarh chefs form body to protect & promote Punjabi cuisine

Chandigarh-based chefs have teamed-up to protect their Punjabi cuisine and its craft.

The Chandigarh-based Chefs Association of Five Rivers is looking forward to brainstorm on how to focus on the culinary crafts of Punjab. The senior chef’s of the cuisine and region formed the new organisation to offer a platform to young chefs and aid the exchange of ideas and expertise among the chefs in Chandigarh and Punjab regions.

The newly-formed association is already recognised by the Paris-based World Association of Chefs Societies (WACS) and the IFCA.

Navdeep Sharma, a well-known chef and food educationist is CAFR’s founder-president. “The chefs from the region have for long felt a need for a professional association that would give a platform to them to exchange ideas and expertise. The profession is growing and we also need to channelise the energies of the talent pool we have,” said Sharma, who is also the principal, Food Craft Institute, Hoshiarpur, and Institute of Hotel Management in Bhatinda.

“Our vision is to bring everyone’s expertise under one roof and also give a fillip to regional food tourism and revive old traditional recipes,” said Sanjiv Verma, who runs Pashtun, one of Chandigarh’s oldest Indian restaurants.

Chefs Association of Five Rivers will offer membership for chefs from Punjab and Chandigarh. Plans include inviting professionals from Himachal Pradesh and Jammu & Kashmir in due course as well as conducting workshops on a regular basis, culinary contests and awards .
